Gluten and Dairy Free Penne alla Vodka

Top 8 and Sesame Free

*This recipe can be adjusted to include dairy or gluten if you prefer

INGREDIENTS

​

6 oz. (half the box) of Barilla gluten free penne

1/4 cup of pancetta (remove for vegetarian version)

1/2 white onion finely chopped

3 tablespoons chopped parsley

1/2 teaspoon dried oregano

1/4 cup gluten free vodka

1 cup canned tomato sauce

1/3 cup unsweetened rice milk

DIRECTIONS

​

Cook pasta according to package directions. This recipe took me exactly the same amount of time as cooking the pasta, starting from putting the water up to boil.

​

Over high heat cook pancetta until it starts to brown. Then add onions, parsley, and oregano. Cook until onion is soft. 

​

Remove the pan from the heat to slowly pour in the vodka. Return to heat, adding tomato sauce as you do. Reduce heat to medium and mix in rice milk.

​

Allow the sauce to simmer for 5 minutes, and toss in the cooked penne.

​
